Gluten Free | Dairy Free Chicken Bake:
- Sauté chopped chicken breast ( I season with this spice and olive oil) then sauté with mushrooms
- Add chopped veggies (I buy a couple of these when I go to Traders and freeze them..literally sneak them in EVERYTHING I make for the kids…even Mac and Cheese or spaghetti)
- Boil quinoa pasta
- (If you do dairy- add this ) and you can skip next step
- For Dairy Free version- dairy free cream cheese 1/2 cup and 1 cup of dairy free plain yogurt
- Mix all ingredients and put into baking dish
- Top with dairy free cheese (I love the Daiya Chedder the best)
- Bake at 350 for 15/20. ( I actually have a steam oven I cook in but baking is similar- just make sure you are not browning the top because the noodles will become hard!)
